Ingredients
- 250g milk
- 35g sugar (fine granulated)
- 2 eggs
- 75g sugar (fine granulated)
- 20g water
- a few drops vanilla extract
Step-by-Step Instructions
Step 1
In a pot, heat milk and 35g of sugar over water, stirring continuously until the sugar dissolves. Let it cool to lukewarm.

Step 2
Add eggs to the mixture and stir well until combined.

Step 3
Strain the pudding mixture through a sieve.

Step 4
Stir in a few drops of vanilla extract.

Step 5
In a pot, combine 75g of sugar and 20g of water. Cook over medium heat, stirring continuously, until the syrup turns light amber (do not let it turn too dark or it will taste bitter).

Step 6
Pour the caramel sauce into pudding molds.

Step 7
Pour the strained pudding mixture into the prepared molds. Preheat oven to 160°C and place the molds in a water bath with hot water covering half of each mold, bake for about 40 minutes or until set. Cool then chill before serving.
